About our Chef:

Enjoy food with your senses! That’s what Edward Florian, executive Chef of Reserva Conchal tries to implement in his cooking with our guests. He attended one of US top Hospitality Management schools in the country at Florida International University in South Florida, where he worked for several top hotels and restaurants like Marriott International, Don Shulas Steak House and Normans in Coral Gables. After, graduating with honors at FIU, he continue his love and went to the most prestigious culinary school in the world The Culinary Institute of America where he got his Associate Degree in Culinary Arts and did some “stages” for Daniels, Calle Ocho and worked for many Master Chefs at Hyde Park, New York. He learned the basics like many other great chefs like Anthony Bourdain, Charlie Palmer and went to learn more about this world going to Europe and work for 3 Star Michelin Restaurants like Martin Berasategui, Arzak who are pioneers in the culinary field. Also, on his travels he was able to meet his mentors like Ferran Adria and Santi Santamaria who are known today as one of the top chefs in the world.

Then coming back to Costa Rica to explore his roots, “back home”, he developed gelato shops and did some consulting work for prestigious companies. After a couple years, he was able to get an opportunity to open the restaurant for the Top Boutique Hotel in Costa Rica; Gaia Hotel and Reserve and be part by Conde Nasts Top Boutique Hotel of Latin America for 2007. After, establishing this restaurant, he is now in charge for developing the food scene for Reserva Conchal Beach Club.

The focus for this new restaurant will be using his knowledge and skills to develop a formal restaurant focusing on French technique with Latin American recipes and flavours and combine both for a perfect harmony. This concept will become modern and minimalistic to transcends the traditional and lineal into a more delicate and delightful expression of food.

This menu, will reflect the 21st century clientele who want to experience a fresh 5 star meal with lots of glamour and delightful environment. Also, the Club House will have a Lounge, Snack Bar that will reflect the simplicity of nature and complement the guest who wants an informal snack but still wants an amazing experience with his palate and enjoying the beautiful setting of Reserva Conchal has to offer.
